I think if the label says "scutching knife" instead of "scritching knife,"
we might assume it was used in the processing of flax.  I don't think any
flax has been grown in Wayne County for a LONG time (I grew up there), but
weaving was done there years ago, and maybe they wove linen as well as other
fibers???  I have heard of flax scutching before, and on consulting the
dictionary, it says 'scutch' means 'to separate the woody fiber from flax or
hemp by beating.'
