I am comparing the 325 version and the 381 version of the Nicene Creed.

Can someone help me compare and contrast the meaning of ὁμοούσιον τῷ Πατρί versus ἐκ τῆς οὐσίας τοῦ Πατρός? Are there particularly good articles to look at on this?

I don't know about articles (I'm sure quite a lot has been written about it), but these are practically synonymous expressions. In other words one effectively functions as the definition of the other.
