I like my liberty and freedom apples. I can't eat sour apples they make my 
tongue and mouth sour. I wait till they hit the ground. Can't eat from the 
tree unless they set some.

The Fedco catalog describes Liberty as   "....of very good dessert
quality when dead ripe."

And that seems to be key.  The fruit really is quite tart until dead
ripe.  I am a big fan of Liberty.  They are the most vigorous trees
in my orchard and begin fruit production at an early age.  I just had
a guest here from NYC this morning who raved about the Liberties I
gave her right off the tree but turned her nose up at the
Honeycrisps.  "Too sweet," she said.
