In the best traditions of permaculture and human history, you might 
try harvesting them and eating them... Most of a cattail is edible, 
the remaining portions will, of course, compost.  I particularily 
like the lower stalks eaten raw (like celery but spicier)  Roast the 
roots, use the pollen as flour....
