Title: Food preference and texture of cereal products as determinants in food acceptance for children of early childhood and elementary school age

Abstract: "Ninety two kindergarten and grade four children of a public school participated in this study which examined the relationship between attitudes towards foods and acceptance of tasted food samples varying in texture.

A six point facial hedonic scale was used to measure attitudes towards foods by asking children's responses to food names (food preference). Similarly, their responses to tasted food samples (food acceptance) were recorded. Different textures were prepared by subjecting the following food samples to varying levels of water activity: oatmeal cookie, granola bar, graham cracker, and saltine cracker. Data were analyzed by analysis of variance with repeated measures.

Children differentiated their preferences to foods. However, when cereal products were examined separately, there was only a trend towards a statistically significant difference according to food item. There were few differences detected in food preference according to age and gender.

When children were asked their responses to tasted food samples, there were no differences in ratings by age nor by food item. There was a tendency for boys to rate samples higher than girls.

Not all children were sensitive to texture in the tasted food samples. For those children who detected texture differences, there was an effect on food acceptance ratings indicating that texture was a factor in the acceptance of food.

The measures of food acceptance and food preference were not highly correlated suggesting that the attitudes expressed by the children to the foods of this study were not a good predictor of taste acceptance of these foods.

This study provided an insight into factors affecting food acceptance and indicated that consideration should be given to children's responses to the sensory qualities of food in any evaluation of food acceptability."
