I would like to use them for something Hello Allan: Try these: CAJUN TOMATO RELISH This recipe is for green tomato sauce aka relish. It comes from bayou country near Bayou Caroline, La. I love this stuff! Enjoy! CAJUN TOMATO RELISH 2 gal green tomatos 1/2 cup chopped Jalapenos 1/2 cup sea salt 1 gallon onions chopped 1 Tblspn fresh ground black pepper 5 cups sugar 1/2 gal white vinegar 1/4 cup pimientos chopped 1 clove garlic minced 1 cup green Bell peppers chopped Quarter the tomatos, mix with the onions, garlic, peppers, pimientos, spices, sugar, & vinegar. Boil for 25-30 minutes. Pour into sterilized jars & seal. This is served with seafood such as fried catfish, fried shrimp, etc. It is also great with bar-b-que or fried chicken. Makes 8-10 qts. *********************** DAMN HOT STUFF Qty Measurement Ingredient 1 qt green tomatoes, ground 1 qt onions, ground 1 pt hot peppers, ground 1 qt vinegar 1 pt sugar 8 ozs prepared mustard 1/2 tsp salt Mix together and boil for 10 minutes. Pack in jars, seal. NOTE: I have not made this recipe. Discard cheesecloth bag.Pack immediately into hot,sterilized jars. Be sure liquid covers vegetables.Seal at once.Process 10 minutes in a boiling water bath.Makes 7-8 pints. My Mom's (Ruth Fahy) Relish ÿ4 cups ground onion (that's right, grind them in a meat grinder--and watch out for your eyes!--BEST DONE OUTDOORS) 1 med. head green cabbage--ground 10 large green tomatoes--double for paste varieties 12 green peppers 5 red peppers 1/2 cup salt (I forgot to include "ground" ) Mix ground veggies with salt in a crock or stainless steel bowl. Cover and let sit overnight. Next day: Drain and rinse veggies. Press out excess moisture. Put in stainless steel pan with: 6 cups sugar 1 T celery seed 2 T mustard seed 1 1/2 t turmeric 4 cups vinegar 2 cups water Bring to boil stirring frequently. Boil for 3 minutes and pack into hot jars. Seal jars and process in a water bath canner for 5 minutes. Remove and cool. Makes the best potato salad you ever tasted.
