Put away the donuts or Danish. Skip the bagel with cream cheese. When in San
Antonio, the breakfast of choice is the breakfast taco. 

The foundation for nearly every breakfast taco is the flour tortilla, the
fresher the better and homemade, of course. Most breakfast tacos are an
algebraic equation of 2 of two ingredients (x+y=z). For example: 
(eggs or huevos) + (potato or pappas) = breakfast taco

From this basic equation of two ingredients, you are really only limited by
the restaurateurs creativity. You can get potato with bacon or bacon with
egg. Egg with sausage, not to be confused with huevos con chorizo (egg with
Mexican style sausage). 

For the more adventurous, there are chiliquilles, a delicious blend of fried
corn tortillas, cheese, tomatoes, onions, and hot sauce. For the really
adventurous, there is barbacoa, which is cheek meat of a cow. For the
ridiculously adventurous, order a lengua or cesos taco before you get the
definition.

Where do you get these breakfast tacos? One of the best places is at the
Express-News informal cafeteria, the Oasis Cafe located at 210 McCullough.
Whether the local chain Taco Cabana or your neighborhood taquiera, your
breakfast taco is bound to give you the flavor of San Antonio.
