BBEdit: the File menu doesn't suck.
It *looks* like your average File menu.... What you need to know:

New
Open
Open from FTP Server...
Save
Save As...
Save to FTP Server...
Save a Copy to FTP Server...
Revert to Saved...
Page Setup...
Print
Quit

New: mouse over this option and you'll see menu slip open that allows you to start a new text or HTML document. Select HTML and a form pops up prompting you for a title, base, meta and link. Fill in the title and click Create. You now have a new HTML document.

Open: your traditional Macintosh Open menu. Find the file you'd like to edit, then click Open.

Open from FTP Server...: this option allows you to open the file directly off of the server. It saves you time in that you don't have to actually download the file to your hard drive.

Save: your traditional Macintosh Save menu.

Save As...: your traditional Macintosh Save As... menu. You can save the file under a different name and under a different directory.

Save to FTP Server...: the opposite of the Open from FTP Server... option, this one allows you to save your file to the server. Here it saves you the time spent opening Fetch and uploading the file by hand.

Save a Copy to FTP Server...: basically, this one is the exact same thing as above. You'd use this one if you were editing a local file and wanted to save it to the server without saving it to your hard drive at the same time.

Revert to Saved...: in case your really screw up, use this to start all over from the last time you saved the file.

Page Setup...: this option allows you to prep your document for printing.

Print: prints your document.

Quit: your traditional Macintosh Quit menu.
