It is quite possible.

However, one virtue of encryption technology is that you can use it to
generate a hash of digitized information.  Once made, that has is quite -
sort of like the document's thumbprint.   Alter the document even slightly
and it then yields a different hash.

Of course, you could first alter the document and then hash it, but this
makes manipulation more difficult and subsequent manipulations easy to
establish.
