pressure sensitive tape and pastes in book repair

My question of the week concerns pressure sensitive tapes vs. pastes used in
book hinging. I've begun a self-educating book repair project, and am
curious if others have used Filmplast SH for hinging book blocks and covers.
I'm always leery of pressure sensitive tapes, but that led me to another
consideration of pastes that I had never thought about before (and hopefully
not too naive a question.) Since most are reversible with water, I'm
wondering how the paste reacts during a water emergency. Has anyone had an
experience where the paste reacted to water, say from a burst pipe or
something, and ran and destroyed the item itself or items in the vicinity?
Just more curiosity than anything.

Thanks as always,
Neil
