We've heard of spedies in Northern NY, too, though they're really an import courtesy of the State Fair in Syracuse. In fact, I made a batch of chicken spedies (more politically acceptable than lamb or pork in our family) using State Fair brand spedie sauce a few weeks ago. Cooked over a wood fire on our camping vacation in the Adirondacks, they were a big hit.
 
In our neck of the woods, the regional food of note is the Michigan: a hot dog covered with a sauce that's sort of a cross between chili and sloppy joe, topped with chopped onion and mustard. Real health food. There was a major crisis this year when the regional bread company, now owned by an international corporation, ceased production of it's oversized 'New England Frank' rolls. Hit the front page of the newspapers followed by fiery editorials. Almost matched the indigestion a couple of Michigans will cause.

OK, here's one I'll bet few if any have heard of:  Spedies.  They're peculiar to upstate New York, more specifically the "Southern Tier" around Binghamton.  Marinaded and skewered pork and/or lamb grilled outdoors and put into rolls or wedges of Italian bread.  As a kid we used to go up to a place called Quaker Lake just over the border in Penn. and always had these. They're fantastic.  You can even get them in the bars in the area, along with Buffalo wings and steamers of course.  My sister and I even had a case of the marinade shipped out here to Seattle last Christmas...
