Those are interesting results.  I have what I think is a refractometer, cost about
$250, and gives results in % soluble solids.

How can I relate % soluble solids to specific gravity?

I have found that the newer redder Jonagolds (Decoster, Jonagored) have lower
soluble solids than the original Wilmutta Jonagold.

I'll go around the orchard this Fall and check SS.
