Sure, you can add too much of anything.

Too much water, and it's called drowning.
Too much food, and it's called clogged arteries.

So, sure you can add too much. Again, the thing to watch is oxygen. Oxygen probe is good. Activity assays also do a good job, especially when you are trying to work out a new recipe.
