Hi Pauletter -

Please come take an SFI course so you can answer these questions. The approach to answering questions like these is on the SFI website. But you want specific answers to this question, and we've just finished up some research on this.

Of course there is un-reacted chlorine and hypochloride in your water. That's why you aerate the water before you use it, or the un-reacted oxygen radicals take out the membranes of the bacteria, fungi and protozoa we want in the tea. So, remove the gases by aerating the water.

The alkaline conditions are another problem. You have to add acid to neutralize an alkaline water. How much acid? Please call us here at SFI and we can consult with you about how to figure that one out.

Not that hard to do, but SFI has spent a fair chunk of change figuring that one out. While I love to give information away for free, I can't do that and have SFI stay solvent to do the next research piece to answer your next question.

So, please, send a sample into SFI for analysis, and get your 15 minutes of consulting time that comes with each set of samples.
