I didn't write the initial message, but this is how I make lemon balm tea.  
First, gather the plants, preferably just before they bloom.  I put them in 
large brown paper bags and fold over the top.  They will dry very nicely 
this way, as long as you keep the bag dry.  I usually set it somewhere 
high, like on a top pantry shelf and wait a week or two, depending on the 
humidity.  Check the bag and stir it every day or two.  When leave become 
dry and crunchy, empty into a large bowl and crunch up leaves, stems and 
all.  Then I put the whole mess into my colander and sift it back into the 
big bowl.  The stems stay in the collander and you get a nice 
product--suitable for brewing!
