Stuart why 80 - 85 Deg F? The climate in England soil temps are not that warm. Why propagate microbes that only like the tropics? Brew as near soil and climate temps as you can. Results will be lower numbers. Is it really a numbers race or do you want microbes that will live in your area? Your gardens? Your climate is like Seattle's for the same reason, Big temperate water up wind. How to brew at lower temps? I find it takes longer and you don't set numbers records. You do brew acceptable - even EXCELLENT ( SFI ) numbers.
Sometimes the microbe build up - rush - measured by the O2 required - comes after what is usually considered the end of a cycle. I have recorded this rush as late as 36 to 40 hours. These experimants were done at temps of 50 to 58 F What happens at 40F?

I was hoping to just assimilate some basic knowledge before poking my head above the parapet because that usually provokes a response like "that was answered six months ago" :o{
    Meanwhile I have set up a 'compost' folder in Outlook Express using 'message rules' under the tools tab so if a thread goes over my head or gets wearisome I can always use the 'Delete' button. It's been interesting though, even the advertisements, every little bit helps! :o}
