OK, sounds like the worms are making good compost! You should have the lower tempeature bacteria and fungi in the compost.

So, when you brew, have you followed the growth curves of the bacteria and fungi as you go through the brewing process? Do you see the bacterial bloom first, adn then the fungal? What are the times for both?

Fungi are slower growers at lower temps. It might be that when brewing at 45 F, you might need to brew for two or three days instead of 24 hours.
