Does any have experience brewing with water outside of the neutral range ?
if so please share your results

You select from a population of microbes that tolerate and grow in that pH.
Extreme pH usually means growth is slow, limited and you probably did not add
the right foods to get those organisms to grow. You likely limit
microorganisms too much to have decent coverage on the leaf surfaces to give proper
coverage of plant surfaces with their protective ability.

They may work quite nicely if you are putting your tea into soil that has the
same pH, and thus the same limitation for microbial growth. Do some testing
to figure out what microbial foods those soil bacteria and fungi like best.
