The person you were talking to doesn't quite have the whole story.

Chitin is a food resource for some really good fungi - which tend to also attack and consume the oomycetes, which is the group of fungi that has quite a few of the disease causing fungi in it. Not all the bad guys are oomycetes, but many are. And chitin seems to feed the beneficial fungi that protect against the diseases.
