World War II food exhibit



Several people asked if the exhibit I mounted recently, "World War II,
Food, and the Culinary Institute of America" was going to be on the
web. With 50 feet or so of exhibit shelves, I was not able to manage
that, but selected portions of it are visible at:

You can click on the small pictures to get a larger picture and the
caption--except that I see that he edited my caption for the MRE
photo, omitting the part that says that an army reservist who served
in the 1980s said that the dried fruit in MREs was best when
reconstituted with rum!

Note that just to the left of the picture that includes jars of dried
beef and a photo of a soldier on KP is a copy of the 1942 _Army Cook_
manual opened "at random" to the recipe for creamed dried beef on
toast. I did this intentionally so that people who have been in the
military or have military connections and know the slang name for it
will get a laugh; others may enjoy seeing an sample army quantity
recipe!
