I saw something on the subject of composting chicken fatalities on
farms on a Google.com search once last year.

I have no data to prove that this was safe, but I did it anyway:
Last Thanksgiving and Christmas, I put some old chicken and turkey
meat in my aerated tea recipe! I added mature compost, molasses, and
corn meal to it. After 3-5 days, it smelled ok, with little
foaming. I assume it was a strong bacterial tea. Huh?

I diluted it and used it as a soil drench around my fall/winter cover
crops and my lettuce, mustard greens, and collards last winter.
