Do the large stalks provide better food for fungi than if they were
chopped or shredded?

I've been adding small wood chips/shreds as I've built the latest
pile. We have an old rotted log in the yard near the firepit that a
passing bear churned up in his search for grubs last spring. That
left us with a pile of really crumbly rotted wood, as well as a
pretty good story to tell!

I think Elaine recommended adding small bits of wood to the compost
pile for fungal growth.
