?? Any significant data that shows pathogen growth at 5.5 and higher DO2 at elevated - 75 to 90F levels when aerobic bacteria and fungi are present in useful numbers? I think Elaine's work showed near zero pathogens any time the DO2 was where it should be during the brew cycle even when KNOWN INTENTIONAL E COLI were made present in the compost used in the brew. . As for "hidden non- aerated, non- circulated areas" there won't be any in a well designed brewer Bob

Excellent points Ted; simple and straightforward!
  
I believe Henry is simply stating that a double standard exists within the current regulations..."that if the compost met the standard, and that same compost is used for ACT then the tea should meet the same standard...based on current regulations.
